Ingredients
- Tomato - 2 cup
- Bell pepper - 1 cup
- Jalapeno - 1
- Onion - 0.5 cup
- Olive oil - 2 tbsp
- Salt - 0.5 tsp
- Black pepper - 0.25 tsp
- Egg - 4
Instructions
- Dice tomato, bell pepper, jalapeno, and onion.
- Heat olive oil in a pan over medium heat.
- Cook onion and jalapeno for 2–3 minutes until softened.
- Add bell pepper and tomato, season with salt and black pepper, and simmer 5–7 minutes until slightly thickened.
- Make small wells in the sauce and gently drop in 4 eggs.
- Cover the pan and cook 5–7 minutes until eggs are set to your liking.
