Ingredients

  1. Tomato - 2 cup
  2. Bell pepper - 1 cup
  3. Jalapeno - 1
  4. Onion - 0.5 cup
  5. Olive oil - 2 tbsp
  6. Salt - 0.5 tsp
  7. Black pepper - 0.25 tsp
  8. Egg - 4

Instructions

  1. Dice tomato, bell pepper, jalapeno, and onion.
  2. Heat olive oil in a pan over medium heat.
  3. Cook onion and jalapeno for 2–3 minutes until softened.
  4. Add bell pepper and tomato, season with salt and black pepper, and simmer 5–7 minutes until slightly thickened.
  5. Make small wells in the sauce and gently drop in 4 eggs.
  6. Cover the pan and cook 5–7 minutes until eggs are set to your liking.
